Ingredients

  • 3 Tbsp. chili powder
  • 1 tsp. chili powder
  • 2 ½ tsp. garlic powder (or garlic granules (does not clump when stored))
  • 2 tsp. onion powder (or onion granules (does not clump when stored))
  • 2 tsp. paprika (regular, not smoked)
  • 2 tsp. cumin
  • 1 tsp. oregano
  • 1 ½ tsp. Kosher salt
  • 1 Tbsp. potato starch (corn starch may be used, but it will not be gluten-free)

Instructions

  • Combine all ingredients, 3 Tbsp. chili powder + 1 tsp. chili powder, 2 ½ tsp. garlic powder, 2 tsp. onion powder, 2 tsp. paprika , 2 tsp. cumin, 1 tsp. oregano, 1 ½ tsp. Kosher salt, 1 Tbsp. potato starch, and stir to mix well.

For Making Tacos

  • Brown ground chuck (or protein of choice) until no pink is seen and drain fat.
  • Sprinkle with taco seasoning mix, and stir well to combine.
  • Add 1 - 1 ½ cups water (adding a small amount at a time until desired consistency is reached) and heat until thickened and bubbly.
  • Serve on warm tortillas, and top with favorite toppings such as shredded cheddar cheese, diced tomato, lettuce, etc. Guacamole is also delicious!

Notes

 1) Adding about 1/4 cup milk to the pan when cooking helps to break down the proteins in the beef and renders a more tender bite without any hard clumps.  Don't worry, it will be removed when draining the fat from the meat.
2) Buy fresh, quality spices - Yes, it really makes a difference!
3) Read the labels to make sure the ingredients do not contain anything artificial or chemically processed.
4) Adjust the spice level to your tastes - Start with my basic recipe and adjust it based on your preferred spice level. If you like your tacos mild, use less chili powder. On the other hand, if you love heat, add extra cayenne or red pepper flakes. Make the spice your own!
5) Make a big batch - It will stay fresh for several months stored in an airtight container, away from heat and light (pantry shelf is perfect!) This makes it convenient for quick meals, saving you tons of time and effort when making tacos, chili, or even roasted vegetables.
6) Label your mix - Don't forget to label your container with the seasoning name and the date you made the seasoning. This will help you track how fresh it is, and you’ll know when it's time to make a new batch.
